I'm dieting, so I made mine on an Arnold Wheat sandwich thin, skipped the dressing and used a low cal Ken Davis BBQ sauce. My sandwich came in at 215 Calories with 2.4 ounces of shredded chicken breast. Yummy and satisfying lunch, I'll be making it again.
I heated the mixture for 45 seconds in the microwave to take the chill off.

....I saw this recipe and fell inlove. You can easily make this leftover meal low in sodium and health cautious while enjoying the mouth watering flavors.I used a low fat-low sodium BBQ sauce, and X-out the ranch dressing. I did however, added my little touch by sauting' red onions with a tad of extra virgin oil to the skillet, to give it that sweet caremelized taste...Goes great with BBQ.

I love the fact that I found a recipe that I can use for my leftover chicken as well as satisfy my BBQ crave and be health cautious... the only thing that it needed for that extra sweet touch was saute'd red onions with alil extra olive oil to suate. Mmmmm...Deeeelish!!
I couldn't find any carrots, so I substituted celery in, and it was really good!
