Barbecued Chicken Burritos

These burritos are something of a Tex-Mex wonder: tangy barbecue sauce, some roast chicken (or rotisserie chicken) and vegetables, all wrapped up in tortillas. For the best taste, look for a fiery barbecue sauce without added corn syrup.

My girlfriend and I just whipped up a few of these. They were fun and easy to make together. It makes a lot of food for two, we've got some leftovers. May try the taquito idea posted above. Thanks for sharing the recipe.

So delicious and so easy to make, we had leftovers a few days in a row and to give it a little change, we made the filling into taquitos and baked them....SO YUMMY!!!

I loved this recipe! I did add a little more sour cream than it called for because the bbq sauce I used was very strong and dominated the flavor too much. I would highly recommend this recipe though. I am definitely keeping it on my list of favorites! Very quick and easy to prepare, too!
