Barbecue Portobello Quesadillas

This smoky mushroom-filled quesadilla is reminiscent of pulled pork. A touch of chipotle chile pepper adds extra heat. Serve with coleslaw and guacamole.

I was surprised how much I liked this recipe! It sounded a bit strange but it was very good. I made it as directed except that I added a few extra veggies. I will use a little less BBQ sauce next time (but keep the full amount of chipotle as we like it spicy in our house)!

They were so messy to make! The bbq sauce kept spilling everywhere when I flipped them, and eating them was a mess! They tasted good, but I wont make them again if I can't figure out some cleaner way to make it.

Delicious. Definitely reduce the BBQ sauce (I used about 2 tbs) and I couldn't get chipotle so I used a combination of chili sauce and fresh chili pepper. Yum.

I really enjoyed this. However... my husband is not a huge BBQ fan, and this made A LOT of sauce. Instead of mixing the mushrooms into the sauce I just spread about a tablespoon of it onto each tortilla and then topped with the rest of the ingredients. This worked well for us and gave just the right amount of BBQ flavor. I would make this recipe again.
