Just made this today and it is absolutely Awesome!! Even though my husband and kids aren't vegetarian like I am, they loved it too!! Next time I think I will add more mushrooms! Very easy recipe that you can prepare quickly! Definitely a keeper!!

This smoky mushroom-filled quesadilla is reminiscent of pulled pork. A touch of chipotle chile pepper adds extra heat. Serve with coleslaw and guacamole.

I was surprised how much I liked this recipe! It sounded a bit strange but it was very good. I made it as directed except that I added a few extra veggies. I will use a little less BBQ sauce next time (but keep the full amount of chipotle as we like it spicy in our house)!
They were so messy to make! The bbq sauce kept spilling everywhere when I flipped them, and eating them was a mess! They tasted good, but I wont make them again if I can't figure out some cleaner way to make it.
