Baked Cod with Chorizo & White Beans

January/February 2008

Your rating: None Average: 4 (154 votes)

This recipe follows the Spanish and Portuguese tradition of pairing mild white fish with full-flavored cured sausage—just a bit gives the whole dish a rich, smoky flavor. Make it a meal: Enjoy with steamed green beans and roasted potatoes tossed with thyme and coarse salt.

This was so flavorful!! I was pleasantly surprised! I used tilapia because the store didn't have cod. Delicious.

The basics of this recipe will become a staple for me when I cook a white fish. I used tilapia, regular onion, turkey sausage, chopped tomato and no beans (which I would like to try at another time). We found the flavors of this recipe to be excellent and the fish was nice and moist.
