tasty, attractive & colorful. Followed halved recipe, for two. Served with saute'd zucchini. Filling and good. Sure to make again.
Baked Cod with Chorizo & White Beans
From EatingWell: January/February 2008
This recipe follows the Spanish and Portuguese tradition of pairing mild white fish with full-flavored cured sausage—just a bit gives the whole dish a rich, smoky flavor. Make it a meal: Enjoy with steamed green beans and roasted potatoes tossed with thyme and coarse salt.

I used tilapia and andouille chicken sausage and doubled the sausage for my husband. He loved it!!
Not bad a little flat, but I used cajun sausage, which might have been a little mild. I added a clove of garlic, too. I wished I added some red pepper flakes. Fish throws off a lot of juice.
Delectable dish...will definitely make it again. I served it with steam broccoli and it worked wonderfully.

This was one FABULOUS date night meal at home for my man! :) I used stewed tomatoes since I had them on hand and I threw a few shrimp in with the tilapia (no cod at the store that day), & skipped the sausage but used a few drops of liquid smoke. Next time I may add a few scallops too. I'm adding this one to the "meals for my man and me" section of my recipe collection. LOL! Soooo good... that when he thought I wasn't looking he licked the plate!
