I cooked this for a dinner way to make cod. It turned out fine. I Love cheese but can only do the no salt swiss and I thought it did ok when backed on. but I might have baked it too long. I would like my cheese a little bit more softer.

Dry white wine and Gruyère cheese give this fish casserole a rich flavor that hides its virtue. Before baking, we top the dish with seasoned whole-wheat breadcrumbs, which add a wholesome, nutty flavor and dietary fiber. For variety, you can substitute almost any mild white fish.

Made it in a Teflon Pasta pot with oven proof lid. Used Gruyere, dried Thyme and "I know, Oh No!" bottled Cooking White wine. The key to perfection was slice the onions thin, and don't let them burn in the beginning. Add the wine when they just turn flexible. They will caramelize into a wonderful sweet brown later on. Use Spanish Yellow onions. I went with store bought Rosemary focaccia bread for crumbs. Oh and remember gas ovens are hotter and cook quicker so don't stick exactly to the times or fish will overcook. Definitely keeping this recipe!





The recipe was fine and I appreciate that cod does not stink up the kitchen. It just was not all that exciting.





This recipe sounds good as is, but I wanted to use up some things I already had in the house so did not follow the recipe exactly. Rather, I used it as a base and it turned out GREAT! Instead of onions I used 2 leeks and 2 shallots. I did use gruyere, but used a 9-grain artisan loaf for the bread. To save time, I used the food processor to turn the bread into crumbs instead of finely chopping, and added ground flax seed to the bread crumbs (just for the extra health benefits). The wine I had open was not very dry, but it wasn't overly sweet either so it worked well. I also used tilapia instead of cod. So good!





This dish is fabulous. Cod tastes fantastic with the sweet onions and thyme. I do not recommend using other fish as I tried tilapia and it did not marry well with the onions. Stick to the yummy cod. I served it with a side of potatoes and was so full that you would have never known it was fish. Just great! I will make this again and share it with friends.
I forgot to mention that I used swiss cheese and it was perfect.
