I made this for a coworker when she wasn't up to cooking for herself. Her and her family really enjoyed it. Now, whenever we have a potluck at work I bring this in and see lots of smiles!
Orzo, a rice-shaped pasta, makes a delightful base for an authentically Greek combination of shrimp, tomatoes and feta. To serve as a side dish, omit the shrimp and drain the tomatoes before adding them.

This is great! My husband and I love it. I served it to about 10 people at my bookclub and they all loved it. I think that adding black olives might be a nice touch, I think I'll try it next time.
Made this last night for dinner and loved it. It is fairly simple and really hearty. The flavors are wonderful and the shrimp is just delicious. Definitely a one-dish meal so very healthy all around. I highly recommend it!
