Even better than the recipe implies

WOW! I made these last night and they were so tasty.
I used Broccoli and monterey jack cheese, as my fan base doesn't care for Swiss or asparagus. It was really tasty. AND it was easy to put together so I wasn't tired and not wainting to eat it by the time dinner was ready.
The potatoes took longer in the microwave than 20 minutes, but maybe mine were larger. I might even just bake them next time, but it was nice to not have to heat up the oven with it being so hot out right now.

Yummy!

I loved everything about this recipe and will make it again and again. But, I did not like how the potatoes were put in the microwave. I like my potatoes firm on the outside and soft on the inside. So, I baked my potatoes lightly rubbed with 1 tsp olive oil, along with a pinch of salt and pepper. Yes, I waited 60 minutes for these to cook @ 425 degrees (flip half way in between), but after removing from the over, letting rest for 10 minutes and proceeding, all was yummy!

All the ingredients we perfect for the flavor.

Substitute the ham

I substituted the ham for chicken-apple sausage and it was amazing! It tasted like the perfect spring dinner. Everyone in the family loved it.

Yummy!

I used cheddar instead of Swiss and baked the potatoes in the oven to get crispy skins. Really good and easy.
