easy, filling and tasty

These are great! Neither my husband nor I are big baked potato fans but I was sick of making chicken so I thought I'd give this a shot. Asparagus is very expensive here (I live in Grand Cayman and everything is expensive) so I used fresh broccoli. I was out of sour cream so I used low fat cream cheese. Did them in the microwave for 20 minutes, scooped out the insides, and finished them in the oven. They crisped up in the oven but I didn't have to wait an hour for them to cook. They were really creamy and delicious, and we were stuffed. Served with a simple salad and I couldn't finish the potato. I will definitely make these anytime I have leftover ham from now on.

Tasty and great make-ahead recipe!

The whole family loves this baked potato! My favorite part is that I can make the whole recipe to step 4 (stuffing the potatoes), then wrap and refrigerate. Bake the next evening for dinner. Great make ahead for a quick dinner. AND it's delicious.

Even better than the recipe implies

WOW! I made these last night and they were so tasty.
I used Broccoli and monterey jack cheese, as my fan base doesn't care for Swiss or asparagus. It was really tasty. AND it was easy to put together so I wasn't tired and not wainting to eat it by the time dinner was ready.
The potatoes took longer in the microwave than 20 minutes, but maybe mine were larger. I might even just bake them next time, but it was nice to not have to heat up the oven with it being so hot out right now.

Yummy!

I loved everything about this recipe and will make it again and again. But, I did not like how the potatoes were put in the microwave. I like my potatoes firm on the outside and soft on the inside. So, I baked my potatoes lightly rubbed with 1 tsp olive oil, along with a pinch of salt and pepper. Yes, I waited 60 minutes for these to cook @ 425 degrees (flip half way in between), but after removing from the over, letting rest for 10 minutes and proceeding, all was yummy!

All the ingredients we perfect for the flavor.
My potato with the top included. I shared with my friends on my blog @ lowfatchick.com.

Substitute the ham

I substituted the ham for chicken-apple sausage and it was amazing! It tasted like the perfect spring dinner. Everyone in the family loved it.
