The ingredient combo in this dish was wonderful. I'd make this again if my in-laws were going to be spending the night and I wanted to impress them with a healthy and nice breakfast. For just a regular family meal, I found it a bit fussy to prepare, so I think I'll look for a quiche recipe with the same ingredients but which I think would be less tedious and tempermental to prepare.
Asiago, Artichoke & Spinach Soufflé
From EatingWell: May/June 2012
Try this rich-tasting cheese, artichoke and spinach soufflé recipe for your next brunch. If you can’t find artichoke bottoms—literally the bottom of the artichoke heart without the leaves attached—you can substitute regular canned artichoke hearts instead. Just be sure to pat them very dry to prevent your soufflé from being too wet.
