I make 6 servings of this recipe and have it for lunch at work the entire week. I've just changed my diet to start eating healthier and low calorie and this works well. It's quick and easy. I just love it! Thanks eating well

I was very skeptical of this recipe especially with the apple but tried it and was pleasantly surprised. It was very tasty! I doubled the recipe (exceptions- for the oil left it as is, no cloves since I didn't have cloves, used Gala apples and added some red pepper flakes bc I love spicy food ).
I'm a very good cook and can usually salvage dishes that miss the mark. There was nothing that could save this mess. The flavors were battling each other and no one came out a winner.

I served this over quinoa since my husband is on a high protein diet. I used canned diced tomatoes instead of fresh and added a little more Worcestershire sauce. Also, I used Pink Lady apples and didn't peel them since there are so many nutrients in the skin. It was a great mix of sweet and spicy; both my husband and I loved it and will definitely make it again.
