This twist on the Latin American staple is made healthier with lean ground turkey and crisp apples. It doubles well. Try tucking it into whole-wheat tortillas or serve over instant brown rice for a quick and healthy supper.

Yum. I also grew up with this dish born and raised in California and always loved it spicy and tangy. Add some chopped de-veined jalapeno, finish it with some cilantro and a squirt of lime juice. YUM!

Laura: Maybe you could Google "Tzatziki Sauce" and create a version of that. I think you have a good idea there!

We really liked this, although I made a few changes. I used a pound of ground turkey and a can of diced tomatoes instead of the whole tomato. I also had to substitute black olives because I didn't have green. I added a bit more of all of the spices and also added cayenne pepper to spice it up a little more. Delicious!

I have made this several times (perhaps once a year?), and love the unusual combination of flavors. My husband and 6 year old also like it. As tomatoes are out of season, I often use diced, no salt added canned tomatoes. This recipe might be a bit sweet for those who don't prefer any sweetness in a main course.
