Ultimate Mashed Potato Recipes
Turn up the volume with these flavorful mashed potatoes.
The flavor of this salmon chowder is greatly enhanced by adding either fresh dill or dried tarragon: each herb lends its own distinctively different and appealing character to the soup. Even if you don't keep instant mashed potatoes in your pantry, it's worth picking some up for this soup. They give the soup a thick, chowder texture without any heavy cream or butter. Leftover mashed potatoes work too, but give a slightly less-velvety texture. Recipe by Nancy Baggett for EatingWell.
Mashed Sweet Potatoes with Coconut Milk
This three-ingredient dish, known as piele in Hawaii, is fabulously simple. Coconut milk--an occasional indulgence because of the saturated fat--contributes rich flavor.
Layered Mashed Potato & Mushroom Casserole
Fancy up regular mashed potatoes with a layer of mushroom duxelle--a sauté of finely chopped mushrooms and shallots. We omitted the traditional butter in the duxelle and added chard for a nutritional boost. Serve this hearty side in place of mashed potatoes at any holiday feast or enjoy it as a vegetarian main dish.
Turkey & Leek Shepherd's Pie
The mashed potato-covered shepherd's pie was originally created to use up the leftovers from a festive roast. This version blends peas, leeks and carrots with diced turkey, all in a creamy herb sauce. The dish is a perfect way to create a second meal with the holiday turkey but if you like, use leftover roast chicken, duck or goose.
Steak & Purple-Potato Salad
This hearty steak and potato salad is inspired by salpicón, a favorite dish in Chile. The purple potatoes add vibrant color but you can substitute any young “new” potatoes that are harvested early in the season--even small fingerlings would work. Serve on a bed of spicy mesclun greens to round out the meal. This recipe can easily be doubled.
Pork Milanese with Mashed Sweet Potato
In this Italian-inspired healthy pork Milanese recipe, you'll swear that these crispy pork medallions were deep-fried, when in fact they're cooked with a nonstick skillet and a mere 3 tablespoons of healthy extra-virgin olive oil. While the pork and sweet potatoes are cooking, steam broccolini or green beans and serve with a squeeze of lemon to round out the meal.
Garlic Mashed Potatoes
What could be more satisfying than mashed potatoes? The challenge lies in making them rich and creamy without an excess of butter and cream. In this version, the potatoes are flavored with poached garlic, thinned with chicken stock and enriched with a small amount of reduced-fat sour cream. The recipe can easily be doubled or tripled.
Chicken broth adds a savory touch and reduced-fat sour cream adds richness without lots of fat.
Goat Cheese Mashed Potatoes
Tangy goat cheese and buttermilk team up in these flavorful mashed potatoes.
Herbed Mashed Potatoes
Fresh parsley, chives and thyme give these tangy mashed potatoes beautiful color and great flavor.
Buttermilk-Herb Mashed Potatoes
Simmering a garlic clove with the potato infuses it with flavor. Use whatever fresh herbs you have in your refrigerator.
Bacon Mashed Potatoes
Serve these bacon-studded chunky mashed potatoes with grilled steak or chicken.
Mashed Garlicky Potatoes with Portobello Gravy
The creamy texture of these mashed potatoes is achieved without using cream or milk. The secret is to use the cooking liquid to moisten the puree, adding just a small amount of butter or olive oil to provide a luxurious finish. A rich-tasting mushroom gravy adds old-fashioned comfort.
Champ (Mashed Potatoes from Ulster)
Traditionally, this dish is made with potatoes and scallions and topped with a great deal of butter. Substituting leeks for scallions produces a mellower flavor, one that doesn't require a rich finish. Yukon Golds also add buttery color and flavor.
Buttermilk Mashed Potatoes
Garlic cloves, cooked along with the potatoes, give this puree extra body and lots of flavor.
Roasted Garlic Mashed Potatoes
In this healthy mashed potato recipe, we flavor the mashed potatoes with roasted garlic and tangy buttermilk. Try them alongside grilled steak or chicken.
Roasted Mushroom Mashed Potatoes
In this healthy mashed potato recipe, we flavor the mashed potatoes with sherry-infused roasted mushrooms and tangy buttermilk. For a pretty presentation, serve garnished with snipped fresh chives.
Rosemary Mashed Potatoes
In this healthy mashed potato recipe, we use “no-chicken” broth instead of milk, cream or butter to make full-flavored, vegan mashed potatoes. Regular reduced-sodium chicken broth can be used as a substitute.
Sauteed Leek Mashed Potatoes
In this healthy mashed potato recipe, we flavor the mashed potatoes with leeks lightly sautéed in butter and tangy buttermilk. These mashed potatoes are an amazing side to grilled steak or chicken.
Cheesy mashed potato filling enclosed in a tender dumpling dough, potato pierogis are the ultimate in comfort food. And because this recipe uses wonton wrappers rather than homemade dumpling dough, they take much less time to make.
