Instant Pot Butternut Squash Soup

Use your Instant Pot--or any other pressure cooker--to whip up this healthy butternut squash soup. Anjou pears add sweetness, while the soup gets creaminess and a wonderful flavor from light coconut milk, and a bright, fresh kick from ginger, cilantro and lime. Finishing the soup with whole-milk yogurt adds a nice richness, but you can skip it to keep the soup vegan. (Allow the soup to cool slightly before stirring in the yogurt so it doesn't curdle.) This soup would be equally delicious chilled.

Caprese Zucchini Casserole

A summertime favorite--zucchini casserole--gets an Italian spin in this delicious and healthy side dish with tomatoes, mozzarella and basil. You can use zucchini or summer squash in this caprese-style casserole, or a combination of the two. A sprinkling of fresh basil and a drizzle of balsamic vinegar just before serving brightens up the flavors. Serve with grilled or roasted chicken and some quinoa, rice or couscous to soak up the juices from the casserole for a satisfying and easy dinner.

Creamy Roasted Vegetable Soup with Chicken

This healthy vegetable soup is a great way to repurpose leftovers. The recipe calls for leftovers from two other recipes--Roasted Butternut Squash & Root Vegetables and the chicken from Chicken Kebabs with Warm Cabbage-Apple Slaw (see Associated Recipes). With the help of those two recipes, this soup come together in less than 15 minutes for a fast and delicious meal. The coconut milk broth would work well with other vegetables and with chickpeas for a vegetarian version.
