Clean-Out-the-Fridge Vegetable Stew

Full of flavor and plenty of veggies, this easy vegetable soup is a great way to clear out some space in your produce drawer. This recipe is flexible enough that you can make ingredient changes based on what you have on hand. You could also very easily make this a vegan stew by swapping out the butter for oil. Be sure to defrost the frozen items and drain off any liquid that accumulates during defrosting time you don't water down the stew. Because this recipe makes a large amount of stew, consider freezing half for later.

Slow-Cooker Squash, Millet & Lentil Dal with Herbed Yogurt

This slow-cooker dal recipe has a range of pleasing textures: red lentils and millet break down as they cook, and the toor dal, which are split pigeon peas, stay toothsome. Look for all three ingredients at Indian markets or natural-foods stores. The crock pot does most of the work for this healthy vegetarian recipe, and a quick herbed yogurt added just before serving brightens up the flavors. Bonus: Both the dal and the yogurt can be made ahead and the leftovers are wonderful.

Instant Pot Butternut Squash Soup

1
Use your Instant Pot--or any other pressure cooker--to whip up this healthy butternut squash soup. Anjou pears add sweetness, while the soup gets creaminess and a wonderful flavor from light coconut milk, and a bright, fresh kick from ginger, cilantro and lime. Finishing the soup with whole-milk yogurt adds a nice richness, but you can skip it to keep the soup vegan. (Allow the soup to cool slightly before stirring in the yogurt so it doesn't curdle.) This soup would be equally delicious chilled.

Slow-Cooker Vegetarian Chili

Grab your crock pot for this delicious and easy slow-cooker vegetarian chili with beans, fire-roasted tomatoes, bell peppers and sweet potatoes. The recipe requires just 20 minutes of active time: after a bit of chopping, you just dump the ingredients in the slow cooker and let it do the work. Adding a squeeze of lime juice and a sprinkle of cilantro just before serving brightens up the flavors. Top it with some shredded cheese, if you'd like, or serve it as-is to keep it vegan. Either way, this healthy chili is sure to become a go-to when you want a satisfying and healthy dinner.
