Try this crunchy, healthy salad recipe anytime you have leftover turkey or chicken. It makes a great lunch served on a bed of delicate butterhead lettuce leaves.

  • ⅓ cup light mayonnaise
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 cup shredded cooked turkey or chicken (about 4 oz.)
  • 1 tart apple, such as Granny Smith, chopped
  • 1 cup seedless red grapes, halved
  • ½ cup chopped walnuts
  • 12 large leaves butterhead lettuce

  1. Combine mayonnaise, mustard, salt, and pepper in a medium bowl. Add turkey (or chicken), apple, grapes, and walnuts; toss to coat.
  2. Line 4 small plates with 3 lettuce leaves each. Divide the salad mixture among the plates.
  • To make ahead: Prepare through Step 1; refrigerate for up to 1 day.
