Roasted Green Beans with Applewood Bacon

    • 2 slices bacon, chopped (2 oz.)
    • 3 (8 ounce) packages haricots verts (thin French green beans), trimmed
    • 1 shallot, minced
    • ½ teaspoon smoked paprika
    • ½ teaspoon salt
    • ½ teaspoon ground pepper
    • 2 teaspoons red-wine vinegar
    • 1 teaspoon lemon juice


  • 1 Preheat oven to 450°F. Arrange bacon in a single layer on a large rimmed baking sheet. Roast until opaque, about 5 minutes.
  • 2 Remove the pan from the oven. Stir in beans, shallot, paprika, salt, and pepper; spread into a single layer. Roast until the beans are lightly browned and tender and the bacon is crisp, 10 to 12 minutes. Stir in vinegar and lemon juice, and roast 1 to 2 minutes more.
