2 slices bacon, chopped (2 oz.)
3 (8 ounce) packages haricots verts (thin French green beans), trimmed
1 shallot, minced
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon ground pepper
2 teaspoons red-wine vinegar
1 teaspoon lemon juice
Preheat oven to 450°F. Arrange bacon in a single layer on a large rimmed baking sheet. Roast until opaque, about 5 minutes.
Remove the pan from the oven. Stir in beans, shallot, paprika, salt, and pepper; spread into a single layer. Roast until the beans are lightly browned and tender and the bacon is crisp, 10 to 12 minutes. Stir in vinegar and lemon juice, and roast 1 to 2 minutes more.
