Dark rum and tart Granny Smith apples bring slow-cooker sweet potatoes to life. This dish makes an exciting side for roasted turkey or pork. Piercing the potatoes with a fork is essential to keeping them from bursting in the slow cooker.

  • 3 medium sweet potatoes (about 6 ounces each)
  • 2 cups peeled and chopped Granny Smith apples (about 8 ounces)
  • 2 tablespoons (1 ounce) dark rum
  • 1 tablespoon unsalted butter
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 tablespoons chopped pecans, toasted
  • Small fresh sage leaves (optional)

  1. Scrub the potatoes, and prick with a fork. Stir together the apples, rum, butter, vinegar, and cinnamon in a 6-quart slow cooker; top with the sweet potatoes. Cover and cook on LOW until the potatoes are tender, about 6 hours. Remove the potatoes, and cut in half lengthwise; sprinkle evenly with the salt and pepper. Top the sweet potato halves with the apple mixture and pecans. Sprinkle evenly with the sage leaves, if desired.
