These quick and easy caprese skewers are a perfect way to showcase fresh summer ingredients: mild and milky mozzarella complements sweet tomatoes, while the sweet grilled peaches and salty prosciutto add bold flavors that elevate this classic appetizer.   • 2 medium (6 ounces each) peaches, halved lengthwise and pitted
  • 1½ teaspoons light brown sugar
  • 48 small mozzarella cheese balls (4 ounces)
  • 24 multicolored cherry tomatoes (8½ ounces)
  • 24 large fresh basil leaves
  • 2½ ounces sliced prosciutto, torn into 24 pieces
  • 2 tablespoons balsamic glaze

  1. Preheat grill to high (450°F to 500°F). Place peaches, cut sides down, on oiled grates; grill, uncovered, until grill marks appear, about 2 minutes. Turn peaches over; sprinkle evenly with sugar. Grill, covered, until sugar melts, about 2 minutes. Transfer to a plate; let cool 5 minutes. Chop into 24 (1-inch) pieces.
  2. Thread mozzarella balls, tomatoes, peaches, basil leaves and prosciutto pieces evenly onto 24 (6-inch) skewers. Arrange skewers on a serving platter; drizzle with balsamic glaze. Serve immediately.
