  • 4 cantaloupe wedges ( ½ inch x 1½ inches)
  • 4 honeydew melon wedges ( ½ inch x 1½ inches)
  • 1 ounce soft goat cheese
  • 2 ounces thinly sliced prosciutto
  • ½ medium ripe avocado, sliced into 4 wedges
  • 2 teaspoons white balsamic vinegar
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon black pepper

  1. Place cantaloupe and honeydew melon wedges on a work surface, and spread 1 teaspoon goat cheese on each piece. Cut prosciutto into 12 pieces, and loosely wrap each cheese-and-melon bite and avocado slice with 1 piece of prosciutto. Place wrapped pieces on a serving plate.
  2. Whisk together vinegar and oil in a small bowl until combined. Spoon mixture over bites, and sprinkle with thyme and pepper.
