Master this simple grilled eggplant recipe and you'll have the foundation for all sorts of healthy summer dishes.   • 2 small or 1 large eggplant (about 1¼-1½ pounds total), sliced into ½-inch-thick rounds

  1. Preheat grill to medium-high.
  2. Toss eggplant with oil in a large bowl. Sprinkle with salt and toss again. Grill the eggplant, turning once, until tender and charred in spots, about 4 minutes per side.
