  • Combine ginger beer, vodka, lime juice and simple syrup in a large measuring cup. Pour into eight 2-ounce freezer pop molds. Freeze until firm, at least 8 hours.



Tip: To make your own simple syrup, combine 1 cup sugar and 1 cup water in a medium saucepan; bring to a boil, stirring frequently to dissolve the sugar. Let cool for 30 minutes and then refrigerate until cold, at least 1 hour. Simple syrup can be stored in the refrigerator, covered, for up to 6 months.

To make ahead: Store in the freezer for up to 1 month.
