Popsicles take a boozy turn with these ginger, lime and vodka ice pops inspired by a classic Moscow Mule cocktail. These simple ice pops have only 47 calories per pop and take just 5 minutes to prep—just remember to stick them in the freezer at least 8 hours before you're ready to serve them.

  • 1 (12 ounce) bottle ginger beer
  • 3 ounces vodka
  • ⅓ cup lime juice
  • 1 tablespoon simple syrup (see Tip)

  1. Combine ginger beer, vodka, lime juice and simple syrup in a large measuring cup. Pour into eight 2-ounce freezer pop molds. Freeze until firm, at least 8 hours.
  • Tip: To make your own simple syrup, combine 1 cup sugar and 1 cup water in a medium saucepan; bring to a boil, stirring frequently to dissolve the sugar. Let cool for 30 minutes and then refrigerate until cold, at least 1 hour. Simple syrup can be stored in the refrigerator, covered, for up to 6 months.
  • To make ahead: Store in the freezer for up to 1 month.
