This herbaceous and healthy salad dressing gets a tangy flavor from buttermilk, richness from avocado and brightness from fresh herbs. Try it on sliced tomatoes, cucumber salad or chopped chicken salad and as a dip for carrot sticks, celery, peppers and radishes—you name it! It would also make a great spread for sandwiches.

  • 1 cup chopped fresh herbs (such as tarragon, dill, parsley, chives and/or cilantro)
  • ½ cup plus 2 tablespoons low-fat buttermilk
  • 2 tablespoons water
  • 1 small garlic clove
  • 2 tablespoons plus 2 teaspoons fresh lemon juice
  • ¼ teaspoon salt
  • 1 small ripe avocado, chopped

  1. Combine herbs, buttermilk, water, garlic, lemon juice and salt in a blender. Puree until smooth, about 10 seconds, stopping to scrape down sides as needed. Add avocado; process on medium speed until blended and smooth, about 30 seconds, stopping to scrape down sides as needed.
