  • ¾ cup apple cider or apple juice
  • 1 cinnamon stick (2½ inches long)
  • 1 (20 ounce) can pineapple chunks (juice pack), drained
  • 1 large grapefruit, peeled, sectioned, and seeded
  • 3 kiwis, peeled and cut into ¼-inch-thick slices
  • 1 cup bite-size sticks peeled jicama

  1. Combine apple cider (or apple juice) and cinnamon stick in a small saucepan. Bring to boiling; reduce heat. Gently boil, uncovered, for about 8 minutes or until reduced to ½ cup liquid. Remove from the heat and cool for 10 minutes. Discard the cinnamon stick.
  2. Combine pineapple, grapefruit, kiwi, and jicama in a serving bowl. Pour the reduced cider over. Gently stir to combine.
  3. Cover and chill for 30 minutes to 4 hours before serving.
