¾ cup apple cider or apple juice
1 cinnamon stick (2½ inches long)
1 (20 ounce) can pineapple chunks (juice pack), drained
1 large grapefruit, peeled, sectioned, and seeded
3 kiwis, peeled and cut into ¼-inch-thick slices
1 cup bite-size sticks peeled jicama
Combine apple cider (or apple juice) and cinnamon stick in a small saucepan. Bring to boiling; reduce heat. Gently boil, uncovered, for about 8 minutes or until reduced to ½ cup liquid. Remove from the heat and cool for 10 minutes. Discard the cinnamon stick.
Combine pineapple, grapefruit, kiwi, and jicama in a serving bowl. Pour the reduced cider over. Gently stir to combine.
Cover and chill for 30 minutes to 4 hours before serving.
