Heat oil in a 12-inch skillet over medium heat. Add bacon; cook for 2 to 3 minutes or just until crisp, stirring occasionally. Add leeks and apples; cook and stir for 3 to 4 minutes or just until the apples are tender. Add pea pods; cover and cook for 2 to 3 minutes more or until the pea pods are crisp-tender. Sprinkle with salt and pepper.
