Sautéed Peas & Celery

“This easy side dish uses ingredients you'll most likely always have on hand—frozen peas, celery, and red onion. It's simple, yet tasty, and goes well with any entree you're making for dinner.”
1 tablespoon olive oil
½ cup chopped red onion
½ cup chopped celery
2 (10 ounce) packages frozen peas, thawed
¼ cup chopped celery leaves
½ teaspoon salt
¼ teaspoon freshly ground pepper
1Heat oil in a large skillet over medium heat. Add onion and cook for about 5 minutes or until tender. Add celery and cook for about 3 minutes or just until tender.
2Increase heat to medium-high. Add peas and cook for 3 to 5 minutes more or until the peas are heated through. Remove from heat. Stir in celery leaves, salt, and pepper.
