A fun spin on the classic Niçoise salad, this impressive appetizer board features a smoked salmon spread. Snappy green beans, fresh tomatoes, a medley of olives, and soft-boiled eggs sprinkled with chives and paprika serve as the ode to the classic, while seeded crackers and mixed nuts add a crunchy upgrade.

  • 1 Smoked Salmon Cheese Ball (see associated recipe)
  • 3 cups fresh green beans, trimmed
  • 8 sheets seeded crackers, broken in half (4 oz.)
  • 2 soft-boiled eggs, halved
  • 2 teaspoons chopped fresh chives
  • ⅛ teaspoon paprika
  • ¼ cup roasted assorted nuts or trail mix
  • ½ cup mixed olives
  • 2 tablespoons whole-grain mustard
  • 1½ cups cherry tomatoes, halved

  1. Place cheese ball in a small serving bowl; arrange in the center of the board.
  2. Scatter green beans on two opposite ends of the board, letting them hang slightly over the edge. Arrange crackers on the remaining two ends of the board.
  3. Place 2 egg halves on each side of the cheese ball. Sprinkle the exposed yolks with chives and paprika. Place nuts (or trail mix) in a small bowl; set next to the eggs on the board.
  4. Place olives in a small bowl or ramekin; place near one corner of the board. Spoon mustard into a small jar; place next to the cheese ball.
  5. Scatter tomatoes over the board, filling in any empty spaces.
