We've taken the classic deli combo of bagels and lox and replaced the salmon with a colorful mix of vegetables and avocado in this makeover bagel sandwich that appeals to vegetarians.

  • 4 ounces light cream cheese ( ½ cup)
  • 1 tablespoon chopped fresh dill or 1 teaspoon dried dill, plus sprigs for garnish
  • ¼ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 4 whole-wheat bagel halves, toasted, or 4 slices whole-wheat bread, toasted
  • ½ medium cucumber, thinly sliced
  • ½ medium onion, thinly sliced
  • ½ medium avocado, halved, pitted, peeled, and thinly sliced
  • ¾ cup bottled roasted red bell peppers, drained and cut into thin strips

  1. Stir together cream cheese, dill, salt, and ground pepper in a small bowl.
  2. Spread bagel halves with the cream cheese mixture. Top with cucumber slices, onion slices, avocado slices, and red pepper strips. If desired, garnish with fresh dill sprigs.
