Goat Cheese & Onion Scones

“These savory scones are flavored with a delightful combination of scallions and goat cheese. Serve them warm with fresh butter at your next brunch.”


    • 2 cups all-purpose flour
    • 2 tablespoons finely chopped scallion (1)
    • 2 teaspoons baking powder
    • ¼ teaspoon baking soda
    • ¼ teaspoon salt
    • ¼ teaspoon freshly ground pepper
    • 1 egg, beaten
    • 4 ounces semisoft goat cheese, crumbled or cut into small cubes
    • ½ cup buttermilk or fat-free sour milk (see Tip)


  • 1 Preheat oven to 400°F. Combine flour, scallion, baking powder, baking soda, salt, and pepper in a medium bowl. Make a well in the center of the flour mixture; set aside.
  • 2 Stir together egg, goat cheese, and buttermilk in a small bowl. Add the egg mixture all at once to the flour mixture. Using a fork, stir just until moistened.
  • 3 Turn dough out onto a lightly floured surface. Knead the dough by folding and gently pressing the dough for 10 to 12 strokes, or until the dough is nearly smooth. Divide the dough in half. Pat or lightly roll half of the dough into a 5-inch circle. Cut into 6 wedges. Repeat with the remaining dough. Place the wedges 1 inch apart on an ungreased or parchment-lined baking sheet.
  • 4 Bake for 15 to 18 minutes or until golden. Serve warm.
  • Tip: To make ½ cup fat-free sour milk, place 1½ teaspoons lemon juice or vinegar in a glass measuring cup. Add enough milk to make ½ cup total liquid; stir. Let mixture stand for 5 minutes before using.
