If you think oatmeal can only be sweet, this savory oats recipe will change your mind. Rich curry powder pairs perfectly with nutty cashews and sweet-tart raisins for a unique whole-grain breakfast (or dinner!).

  • ½ cup old-fashioned rolled oats (see Tip)
  • ½ cup water
  • Pinch of salt
  • 3 tablespoons golden raisins
  • 2 tablespoons toasted chopped cashews
  • ¼ teaspoon curry powder

  1. Combine oats, water and salt in a jar or bowl and stir. Cover and refrigerate overnight.
  2. In the morning, heat the oats if desired. Stir in raisins, cashews and curry powder.
  • Tip: People with celiac disease or gluten sensitivity should use oats that are labeled "gluten-free," as oats are often cross-contaminated with wheat and barley.
  • To make ahead: When prepping oatmeal the night before, measure, toast and chop ingredients for the topping.

First try needed more salt then a pinch & a drizzle of honey to get it out of the bland. That tweak worked well, so it may be worth another try to regain the "grab & go" aspect. Maybe the drizzle could be maple syrup.
