Ripe, showy star fruit is exceedingly juicy and fragrant and takes top billing in this simple salad recipe. Choose smaller golden-yellow fruit for this salad and don't peel it—simply rinse it thoroughly.

  • 1 (10 ounce) package torn mixed Italian blend salad greens
  • 1 small star fruit, thinly sliced
  • ½ of a small red onion, thinly sliced ( ⅓ cup)
  • ¼ cup raspberry vinegar or red-wine vinegar
  • 3 tablespoons salad oil
  • 1 tablespoon honey
  • Fresh raspberries (optional)

  1. Toss salad greens with star fruit and onion in a very large bowl.
  2. Combine vinegar, oil, and honey in a screw-top jar. Cover and shake well. Pour over salad mixture. Toss lightly to coat. If desired, garnish with a few fresh raspberries.
