  • 3 spicy black bean burgers, such as Morningstar Farms brand
  • 8 whole-grain corn taco shells, such as Ortega brand
  • 1½ cups packaged shredded lettuce
  • ⅓ cup reduced-fat shredded Mexican cheese blend or cheddar cheese
  • ¼ cup fat-free sour cream
  • ¼ cup salsa

  1. Microwave black bean burgers according to package directions. Using two forks, pull burgers apart into crumbles.
  2. Microwave taco shells according to package directions.
  3. Fill taco shells with crumbled burgers, lettuce, and cheese. Top with sour cream and salsa.
