Long car ride ahead? Resist the urge to pack unhealthy chips and cookies for you and the kids. This healthy vegetable car snack is quick to prepare and can be served up in individual snack bags or pint-size storage containters so it's easier for those backseat folks to enjoy!

  • 1 cup baby carrots
  • 2 cups fresh sugar snap pea pods
  • 2 cups jicama, cut into sticks
  • 1 cup grape tomatoes
  • 1 red bell pepper, cut into strips

  1. Combine the carrots, sugar snap peas, jicama sticks, tomatoes and bell pepper strips in a large bowl.
  2. Transfer veggie mixture to a large resealable bag or divide to fill 7 pint-sized resealable bags. Keep cold in a portable cooler.
