Green Beans with Toasted Almonds

“Don't overpower the flavor of fresh vegetables—sometimes all you need is a touch of the right seasoning and a bit of crunch. These 20-minute green beans are flavored with a coriander-annatto spice blend and are topped with toasted almonds. Serve this side dish alongside any meat or fish.”


    • 3 cups fresh green beans (about 10 ounces), trimmed if desired
    • ¼ cup sliced almonds, toasted (see Tip)
    • 1 tablespoon olive oil
    • ½ teaspoon salad and vegetable seasoning with coriander and annatto (about ½ of a packet; see Tip) or ½ teaspoon Homemade Spice Mix (see associated recipe)


  • 1 Cook beans in a small amount of boiling water in a covered large saucepan for 8 to 10 minutes or until crisp-tender. Drain well. Return to hot pan. Stir in almonds, olive oil and seasoning. Heat through.
  • Tips: To toast nuts, spread in a shallow baking pan lined with parchment paper. Bake in a 350°F oven for 5 to 10 minutes or until golden, shaking pan once or twice.
  • Look for this seasoning blend at a market that specializes in Hispanic foods.
