This grilled chicken has an Italian-inspired taste when topped with a freshly made pesto. Serve it with fresh peas and roasted potato wedges for dinner, or over mixed salad greens for a hearty lunch salad.

  • 1 (3 ounce) cooked skinless, boneless chicken breast half
  • 2 tablespoons basil
  • 1 tablespoon nuts, pine or Pignoiia, dried
  • ½ garlic clove, minced
  • ½ teaspoon lemon peel or zest
  • 1 teaspoon olive oil

  1. Grill chicken breast according to package directions. Mix remaining ingredients in small bowl. Top chicken breast with mixture and serve.
