1 cup quinoa, rinsed and well-drained
1 cup fat-free milk
1 cup water
½ teaspoon ground cinnamon
½ cup chopped pecans, toasted
1 cup fresh blackberries
1 cup fresh raspberries
4 teaspoons honey
In a medium saucepan, stir together the quinoa, milk, water, cinnamon and salt. Bring to boiling over medium-high heat; reduce heat. Simmer, covered, about 15 minutes or until most of the liquid is absorbed. Remove from heat; let stand, covered, for 5 minutes.
Stir in pecans. Top each serving evenly with fresh berries. Drizzle each serving with 1 teaspoon honey.
