Caprese Stuffed Cherry Tomatoes

“Sweet cherry tomatoes stuffed with mozzarella cheese and fresh basil are perfect for a little snack or light appetizer with an Italian-inspired taste.”


    • 24 cherry tomatoes
    • 4 ounces part-skim mozzarella cheese
    • 2 tablespoons snipped fresh basil
    • 1 tablespoon white balsamic vinegar
    • ¼ teaspoon black pepper


  • 1 Using a sharp knife, cut off the top third of each cherry tomato on the stem end. Hollow out the cherry tomatoes; invert on paper towels to drain. Set aside.
  • 2 Cut the mozzarella into 24 equal cubes. In a medium bowl, combine the cheese cubes, basil, vinegar and pepper. Stuff each tomato with a coated cheese cube.
