½ cup chopped red or yellow sweet pepper
½ cup chopped fresh button mushrooms or cremini mushrooms
¼ cup chopped onion
2 teaspoons olive oil
1 medium tomato, seeded and chopped ( ½ cup)
1 clove garlic, minced
2 tablespoons snipped fresh basil
4 thin whole-grain flatbread crackers
1 ounce Parmesan cheese, thinly shaved
In a medium nonstick skillet, cook sweet pepper, mushrooms and onion in hot oil over medium heat for 5 to 7 minutes or until tender, stirring occasionally. Add tomato and garlic. Cook and stir for 1 minute more. Remove from heat. Stir in basil.
Spoon tomato mixture evenly on crackers. Top with shaved Parmesan cheese. Serve immediately.
