In this quick, Italian-inspired snack or appetizer recipe, whole-grain flatbread crackers get topped with peppers, mushrooms, tomato and a sprinkling of shaved Parmesan cheese.

  • ½ cup chopped red or yellow sweet pepper
  • ½ cup chopped fresh button mushrooms or cremini mushrooms
  • ¼ cup chopped onion
  • 2 teaspoons olive oil
  • 1 medium tomato, seeded and chopped ( ½ cup)
  • 1 clove garlic, minced
  • 2 tablespoons snipped fresh basil
  • 4 thin whole-grain flatbread crackers
  • 1 ounce Parmesan cheese, thinly shaved

  1. In a medium nonstick skillet, cook sweet pepper, mushrooms and onion in hot oil over medium heat for 5 to 7 minutes or until tender, stirring occasionally. Add tomato and garlic. Cook and stir for 1 minute more. Remove from heat. Stir in basil.
  2. Spoon tomato mixture evenly on crackers. Top with shaved Parmesan cheese. Serve immediately.
