A savory herb and white wine marinade flavors these grilled rib chops, which are great for family dinners or entertaining.

  • 8 lamb rib chops, cut 1 inch thick (about 2 pounds total)
  • ½ cup dry white wine
  • 2 tablespoons snipped fresh oregano, basil and/or thyme or 2 teaspoons dried
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic, minced
  • Arugula (optional)

  1. Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl, combine wine, herb, oil, salt, pepper and garlic. Pour over chops. Seal bag; turn to coat chops. Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning bag occasionally.
  2. Drain chops, discarding marinade. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare doneness (145°F) or 15 to 17 minutes for medium doneness (160°F). If desired, serve over wilted arugula.
  • Variation: To broil, place chops on the unheated rack of a foil-lined broiler pan. Broil 3 to 4 inches from the heat until desired doneness, turning once halfway through broiling time. Allow 8 to 10 minutes for medium-rare doneness (145°F) or 10 to 15 minutes for medium doneness (160°F).
