  • Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl, combine wine, herb, oil, salt, pepper and garlic. Pour over chops. Seal bag; turn to coat chops. Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning bag occasionally.

  • Drain chops, discarding marinade. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare doneness (145 degrees F) or 15 to 17 minutes for medium doneness (160 degrees F). If desired, serve over wilted arugula.

Variation: To broil, place chops on the unheated rack of a foil-lined broiler pan. Broil 3 to 4 inches from the heat until desired doneness, turning once halfway through broiling time.
