It's hard to believe this chicken recipe uses a whopping 25 cloves of garlic, but cooking garlic within the clove's casing imparts only a mild garlic flavor to foods cooked with it.

  • Nonstick cooking spray
  • 2 to 2½ pounds meaty chicken pieces (breasts, thighs and drumsticks), skinned
  • 25 cloves garlic (about ½ cup or 2 to 3 bulbs)
  • ¼ cup dry white wine
  • Salt
  • Cayenne pepper

  1. Lightly coat a large skillet with nonstick cooking spray. Heat skillet over medium heat. Add chicken and cook for 10 minutes, turning to brown evenly. Place chicken in a 2-quart square baking dish. Add unpeeled garlic cloves. Pour wine over chicken. Lightly sprinkle chicken with salt and cayenne pepper.
  2. Bake, covered with foil, in a 325°F oven for 45 to 50 minutes or until chicken is no longer pink (170°F for breasts; 180°F for thighs and drumsticks).
