This Italian-inspired dinner is the perfect choice for any weeknight. Spend 20 minutes in the morning prepping the dish, and let your slow cooker work its magic while you're at the office all day. The beef round steak is slow-cooked with aromatic vegetables, tomatoes, and Italian seasoning and served over pasta. It's a great meal to come home to!

  • 2¼ pounds boneless beef round steak
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 tablespoon cooking oil
  • 1 large fennel bulb, cut into thin wedges
  • 1 large onion, halved and thinly sliced
  • 1 cup packaged fresh julienned carrots
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can no-salt-added tomato sauce
  • ½ cup lower-sodium beef broth
  • 2 teaspoons dried Italian seasoning, crushed
  • ⅛ teaspoon crushed red pepper
  • 3 cups hot cooked multi-grain pasta
  • ¼ cup finely shredded Parmesan cheese

  1. Cut steak into eight serving-size pieces; sprinkle with salt and pepper. Brown the steak, half at a time, in hot oil in a large skillet.
  2. Place fennel, onion, and carrots in a 4- to 4½-quart slow cooker (see Tip). Place the beef on top of the vegetables. Combine tomatoes, tomato sauce, broth, Italian seasoning, and crushed red pepper in a large bowl. Pour over the steak.
  3. Cover; cook on Low for 9 to 10 hours or on High for 4½ to 5 hours.
  4. Divide pasta among eight serving plates; top each with a portion of the steak and sauce. Sprinkle with Parmesan.
  • Tip: For easy cleanup, line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
