“Enjoy an Italian-style caprese salad served on a toasted English muffin half for a quick, light lunch or small plate that's perfect for hot summer days.”


    • ½ whole wheat English muffin, toasted
    • 2 thin red and/or yellow tomato slices
    • 1 ounce fresh mozzarella, cut into 4 slices
    • 1 teaspoon snipped fresh basil
    • 1 teaspoon olive oil
    • Salt
    • Cracked black pepper
    • 1 grape tomato or cherry tomato, halved (optional)


  • 1 On English muffin half, layer a tomato slice, a mozzarella slice, and half of the basil. Repeat layers. In a small bowl, combine olive oil, dash salt, and dash pepper. Drizzle over top. If desired, top with grape tomato halves.
