½ whole wheat English muffin, toasted
2 thin red and/or yellow tomato slices
1 ounce fresh mozzarella, cut into 4 slices
1 teaspoon snipped fresh basil
1 teaspoon olive oil
Cracked black pepper
1 grape tomato or cherry tomato, halved (optional)
On English muffin half, layer a tomato slice, a mozzarella slice, and half of the basil. Repeat layers. In a small bowl, combine olive oil, dash salt, and dash pepper. Drizzle over top. If desired, top with grape tomato halves.
