Coconut-Grape Bellini

“A Bellini cocktail is a mixture of sparkling wine and peach nectar. Give this version a try—the coconut and grape flavor is enhanced by toasted coconut on the rim of each glass!”
Ingredients
1 cup purple seedless grapes
2 11.2-ounce bottles coconut water
Toasted unsweetened coconut, finely chopped
1 16.9-ounce bottle zero-calorie, grape-flavor water
⅛ teaspoon coconut extract
1 bottle sparkling white wine, such as Prosecco or Asti Spumante
Directions
1Line a small baking sheet with parchment paper. Thread 2 or 3 grapes onto each of eight 3- to 4-inch skewers; place on prepared baking sheet. Freeze 3 to 4 hours or until firm.
2Pour 1 tablespoon of the coconut water onto a small plate and spread toasted coconut onto another small plate. Using eight stemmed glasses, dip the rim of each glass into coconut water, then into coconut to coat.
3In a pitcher or large glass measuring cup combine the remaining coconut water, grape-flavor water and coconut extract. Pour into prepared glasses. Add sparkling wine and grape skewers.
