  • Honey and Spice "Pickles":
  • ¼ cup buttermilk
  • 2 tablespoons cider vinegar
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • ½ cup thinly sliced English cucumber
  • ¼ cup thinly sliced onion
  • Sloppy Joes:
  • 1 pound 93% lean ground beef
  • 1 cup finely chopped fresh button mushrooms
  • ½ cup chopped onion
  • ½ cup green sweet pepper
  • 4 cloves garlic, minced
  • 1 (8 ounce) can no-salt-added tomato sauce
  • 2 tablespoons packed brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon cider vinegar
  • 2 teaspoons chili powder
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 4 reduced-calorie whole wheat hamburger buns, such as Sara Lee brand, split and toasted

  1. To prepare Honey and Spice "Pickles": In a medium bowl, combine buttermilk, cider vinegar, honey, salt and cayenne pepper. Add cucumber and onion; toss to coat. Cover and chill 4 to 24 hours, stirring occasionally. Drain before serving.
  2. To prepare the Sloppy Joes: In a large skillet, cook beef, mushrooms, onion, green sweet pepper, and garlic over medium heat until meat is browned. Drain off fat, if necessary.
  3. Stir in the tomato sauce, brown sugar, mustard, vinegar, chili powder, salt, and black pepper. Cook and stir 1 to 2 minutes or until heated through.
  4. Drain pickles. Serve meat mixture in buns with pickles.
