Add a little of the exotic to the everyday life; this salad fits the bill beautifully! As odd as fruit with salty cheese might sound, this salad is amazingly refreshing and tasty. Try it with grilled fish, preferably at a table with a salty breeze and an ocean view on a hot summer day.

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 6 cups chopped ripe papaya
  • ½ cup snipped fresh mint
  • ½ cup crumbled feta cheese (2 ounces)
  • ½ cup thinly sliced red onion

  1. In a large bowl, whisk together olive oil, lime juice, honey, salt, and pepper. Add papaya and mint; toss gently to coat.
  2. Top servings with cheese, red onion, and additional pepper.
