There isn't anything more refreshing than this combination of honeydew melon and lime juice. It's topped off with club soda, and just looking at the drink will cool you off.

  • 1 3 to 3½-pound very ripe honeydew melon, peeled, seeded, and cubed (7 cups)
  • ½ cup lime juice
  • 6 fresh mint leaves
  • 2⅔ cups club soda, chilled

  1. In a blender, combine honeydew, lime juice, and mint. Cover and blend until smooth. Cover and chill at least 1 hour.
  2. Pour about ⅔ cup of the melon mixture into each glass. Top off with club soda; stir gently. Serve immediately with additional mint.
