  • 1 lemon
  • 1 (.25 ounce) envelope unflavored gelatin
  • ¼ teaspoon kosher salt
  • ½ cup boiling water
  • 5 tablespoons honey
  • 1 cup plain low-fat yogurt
  • 1 cup fresh blueberries

  1. Remove 1½ teaspoons zest and squeeze 1 teaspoon juice from lemon. In a small bowl, stir gelatin and salt into boiling water until dissolved. Stir in lemon zest and ¼ cup of the honey. Stir in yogurt.
  2. Spoon yogurt mixture into stemmed glasses. Chill at least 30 minutes or until set.
  3. In a small bowl, combine lemon juice and the remaining 1 tablespoon honey. Stir in blueberries. Top parfaits with blueberry mixture and, if desired, additional lemon zest.
