This quick-and-easy vegetable stir-fry uses bottled minced ginger and garlic as well as purchased shredded carrots, so it will be ready to eat in just 15 minutes.

  • 2 teaspoons toasted sesame oil
  • 2 teaspoons bottled minced ginger
  • 1 teaspoon bottled minced garlic (2 cloves)
  • 2 cups fresh sugar snap pea pods, trimmed
  • 1 cup purchased shredded carrots
  • 2 teaspoons reduced-sodium soy sauce

  1. In a large skillet, heat oil over medium-high heat. Add ginger and garlic to skillet; stir-fry for 15 seconds.
  2. Add pea pods and carrots. Stir-fry for 3 to 4 minutes or until pea pods are crisp-tender. Remove from heat. Drizzle with soy sauce; toss gently to coat.
